Rotisserie chicken is a great option when you are in need of a quick meal. There are so many different ways to enjoy it and we love applying some of our favourite “leftover roast chicken hacks” to incorporate rotisserie chicken into meals.
Serve as is with potato wedges and steamed vegetables, or take the meat off the bone and make something interesting. Here are some of our ideas.
- Pull the meat into shreds, make our popular Chicken & Pesto Pizza Buns.
- Dice the meat and add to a salad. Our Chicken & Lentil Salad is a great option.
- Combine shredded cheese and diced chicken to make Chicken Lime & Quesadillas.
- Fry up onions, cubed chicken, corn, black beans and taco seasoning. Add mixture in a tortilla and sprinkle some cheese and salsa on top and wrap to make our Southwest Chicken Burritos.
- Shred up chicken breasts and prepare Chicken Gnocchi Soup.
- Whip up some Creamy Buffalo Chicken Dip using chopped chicken. Mix with cream cheese, blue cheese dressing, hot sauce, shredded cheese, water chestnuts and green onion.
- Top flatbreads with cubed chicken smothered in BBQ sauce, cheese, bacon bits and fresh chopped jalapenos. (BBQ Chicken Flatbreads)
- Enjoy an open faced sandwich. Our Chicken Hummus Toast is a great option. Toast bread, spread hummus and then top with spinach or arugula, basil, chicken, capers and tomatoes.

- Whip up a Chicken Cheeseburger Pizza.
