Cut: Boneless chicken Cooked Chicken
1/2 cup (125 g) cream cheese, softened
2 Tbsp (30 ml) lime juice
3 green onions, finely sliced
1 jalapeno, seeded and finely chopped
2 cups (500 ml) chopped cooked chicken (breast)
pinch each salt and ground pepper, if desired
1/2 cup (125 ml) cilantro leaves
1 cup (250 ml) grated cheese (Monterey Jack, cheddar or Tex Mex)
8 small corn or flour tortillas
Note: this recipe is easily doubled to make 4 servings.
In a medium bowl, combine cream cheese, lime juice, green onion, and jalapeno.
Add chicken, salt and pepper and mix well.
Spread the chicken mixture over half the tortillas.
Top with cilantro and cheese and remaining tortillas.
Preheat stove top grill pan or BBQ to medium.
Grill quesadillas for about 2 minutes each side, or until heated through and crisp on the outside.
Serve with salsa.
