Cut: Boneless chicken Cooked Chicken


1/2 cup (125 g) cream cheese, softened
2 Tbsp (30 ml) lime juice
3 green onions, finely sliced
1 jalapeno, seeded and finely chopped
2 cups (500 ml) cooked chicken, chopped
1/2 cup (125 ml) cilantro leaves
1 cup (250 ml) grated cheese (Monterey Jack, Cheddar or Tex Mex)
8 small corn or flour tortillas


Note: This recipe is easily doubled to make 4 servings.

In a medium bowl, combine cream cheese, lime juice, green onion, and jalapeno. Add chicken, mix well. Spread the chicken mixture over 4 of the tortillas.

Top with cilantro and cheese and remaining tortillas. Preheat stove top grill pan or BBQ to medium.

Grill quesadillas for about 2 minutes each side, or until heated through and crisp on the outside. Serve with salsa.
