Cut: Cooked Chicken
2 large flatbread crusts, or 4 small flatbreads or Naan breads
3/4 cup (180 ml) BBQ sauce, divided
2 cups (500 ml) cooked, shredded chicken
1/2 cup (125 ml) crispy bacon bits
2 jalapenos, seeded and finely minced (optional)
1 cup (250 ml) grated mozzarella cheese
1 cup (250 ml) grated smoked gouda cheese (use smoked cheddar, if preferred)
1/2 red onion, thinly sliced
2 green onions, thinly sliced
Preheat oven to 425F.
Arrange flatbreads on baking sheets.
Spread a couple of tablespoons of BBQ sauce on each flatbread.
Toss chicken with remaining BBQ sauce. Spread chicken mixture evenly on top of each flatbread. Top with bacon and jalapenos.
Evenly distribute cheeses, then red onion.
Bake flatbreads for 10-12 minutes, or until the cheese is melted and crust is crisp on edges. Top with green onions.
Note: This recipe easily scales up or down to fit the number of people served.
