Ingredients
2 cups (500 ml) cooked chicken, cubed
1 Tbsp (15 ml) taco seasoning
1 Tbsp (15 ml) canola oil
½ cup (125 ml) red onion, diced
1 cup (250 ml) frozen or canned corn, drained
1 cup (250 ml) canned black beans, drained and rinsed
8 large flour tortillas
1 cup (250 ml) Cheddar, grated
½ cup (125 ml) salsa
½ cup (125 ml) cilantro, chopped and divided
Garnishes:
salsa
guacamole
sour cream
lime wedges
hot sauce
cilantro
Preparation
In a large skillet, heat canola oil to medium high. Add onion and fry for three minutes, add cubed chicken, corn, black beans, and taco seasoning and mix well.
Place 3 tablespoons of the mixture in a tortilla, top with 1 tablespoon of grated Cheddar, a drizzle of salsa and a sprinkle of cilantro. Wrap tightly, bringing in sides to secure. Repeat with all tortillas. Heat a clean skillet to medium high. On the dry skillet, heat burritos on each side until they turn lightly brown, about two minutes.
Seve with your choice of salsa, guacamole, sour cream, lime wedges, hot sauce and chopped fresh cilantro.
