Ingredients

2 cups (500 ml) cooked chicken, cubed (about two chicken breasts)
1 Tbsp (15 ml) taco seasoning
1 Tbsp (15 ml) canola oil
½ cup (125 ml) red onion, diced
1 cup (250 ml) frozen or canned corn, drained
1 cup (250 ml) canned black beans, drained and rinsed
8 large flour tortillas
1 cup (250 ml) Cheddar cheese, grated
½ cup (125 ml) prepared salsa
½ cup (125 ml) cilantro, chopped and divided

Suggested toppings:
prepared salsa
guacamole
sour cream
lime wedges
hot sauce
cilantro

Preparation

In a large skillet, heat canola oil to medium high. Add onion and sauté for three minutes, add cubed chicken, corn, black beans, and taco seasoning and mix well.

Place 3 tablespoons of the mixture in the middle of a tortilla, top with 1 tablespoon of grated Cheddar cheese, a drizzle of salsa, and a sprinkle of cilantro. Wrap tightly, bringing in sides to secure. Repeat with all tortillas. Heat a skillet to medium high. On dry skillet, heat burritos on each side until they turn lightly brown, approximately one-two minutes per side.

Seve with your choice of salsa, guacamole, sour cream, lime wedges, hot sauce and chopped fresh cilantro.
