Ingredients

24 chicken wings (use a combination of flats and drums)
½ tsp (2.5 ml) black pepper
½ tsp (2.5 ml) salt
½ tsp (2.5 ml) baking powder
2 Tbsp (30 ml) butter
2 Tbsp (30 ml) hot sauce

Preparation

Preheat oven to 425F. Line a large baking sheet with parchment paper.

Combine pepper, salt and baking powder and toss with wings, coating evenly. Arrange wings in a single layer on a baking sheet on baking sheet, ensuring wings are not touching. Bake for 60 to 70 minutes until they are crispy.

Five minutes before wings are done, combine butter and hot sauce in a microwave safe bowl or cup and microwave for 60 seconds. Remove and stir well.

Remove wings from oven. Place 12 wings in a large bowl and toss well with butter/hot sauce. Remove remaining wings from the baking pan, arrange on a platter and return wings with hot sauce to oven and bake for an additional 5 minutes. If desired, serve with carrot and celery sticks and blue cheese or ranch dip.
