Preparation Time: 10 minutes + marinating time

Cut: Bone-in chicken


4 bone-in chicken breasts
3 Tbsp (45 ml) olive oil
1 ½ tsp (7.5 ml) smoked paprika
2 Tbsp (30 ml) fresh lemon juice
3 cloves garlic, minced
½ tsp (2.5 ml) salt
½ tsp (2.5 ml) black pepper
1 cup (250 ml) favourite prepared BBQ sauce, plus another ½ cup for brushing


Remove skin from chicken breasts and place in a large bowl.

In medium sized bowl, combine the olive oil, smoked paprika, lemon juice, garlic, salt and pepper and the 1 cup of BBQ sauce. Pour over the chicken and cover bowl. Marinate for at least an hour, or up to 8 hours in the fridge.

Remove the chicken from the fridge 15 minutes before baking. Preheat oven to 375F. Lightly grease a baking dish just large enough to hold the chicken in one layer and the marinade.

Place in baking dish bone side down. Pour the marinade over chicken. Bake for 30 minutes, then turn the chicken, and bake for another 15 minutes.

Remove chicken from the oven and turn bone side down again. Brush the top of the chicken with the remaining BBQ sauce and then return to the oven on broil for another 5-6 minutes or until the chicken has a slightly charred finish (keep a close eye on it at this stage). Chicken is cooked when it reaches an internal temperature of 165 F (74 C).
