Cut: Ground chicken
4 flat bamboo skewers
1 lb (450 g) ground chicken
1 tsp (5 ml) Kosher salt
3 clove garlic, minced
1/4 cup (60 ml) onion, minced
1/4 cup (60 ml) fresh flat leaf parsley, minced
1 Tbsp (15 ml) fresh mint, minced
1 Tbsp (15 ml) ground coriander
1 tsp (5 ml) ground cumin
1 1/2 tsp (7.5 ml) cinnamon
1/2 tsp (7.5 ml) ground allspice
1/4 tsp (1.25 ml) cayenne powder
1/4 tsp (1.25 ml) ground pepper
Soak bamboo skewers for 30 minutes in water.
Combine all ingredients and mix well. Take 1/4 of the ground chicken mixture and shape it around a skewer to form a log about 6 -7 inches long and 1 – 1 1/2 inches thick. Repeat with remaining skewers and mixture.
Preheat grill to medium hot. Grill skewers until a thermometer inserted into the meat reads 175F (80C) (about 12 minutes).
Remove from grill and serve with pitas, diced tomato, diced onion and chopped cilantro.
