2 skinless, boneless chicken breasts, chopped into 1/2" cubes
2 tbsp balsamic vinegar
2 tbsp olive oil
1 yellow, 1 red bell pepper, chopped
2 small zucchini, sliced
1 red onion, chopped
3 cloves garlic, minced
2 tbsp chopped fresh basil (or 2 tsp dry)
1 tsp paprika (or smoked paprika)
1 tsp dried oregano
1 tsp each salt and pepper
Preheat oven to 350F
Spread cubed chicken evenly on a parchment lined baking sheet
In a large bowl combine vegetables, spices, olive oil and balsamic vinegar, toss to evenly coat vegetables.
Pour vegetable mixture evenly over chicken.
Bake at 350F for approximately 1 hour, or until internal temperature of chicken reads 165F on a meat thermometer and vegetables are tender.
Serve with crusty bread or over pasta, if desired.
