Cut: Boneless chicken


2 skinless, boneless chicken breasts, chopped into 1/2" cubes
2 Tbsp (30 ml) balsamic vinegar
2 Tbsp (30 ml) olive oil
1 yellow bell pepper, chopped
1 red bell pepper, chopped
2 small zucchini, sliced
1 red onion, chopped
3 cloves garlic, minced
2 Tbsp (30 ml) fresh basil, chopped (or 2 tsp dry)
1 tsp (5 ml) paprika (or smoked paprika)
1 tsp (5 ml) dried oregano
1 tsp (5 ml) each salt and pepper


Preheat oven to 350F

Spread cubed chicken evenly on a parchment lined baking sheet.

In a large bowl combine vegetables, spices, olive oil and balsamic vinegar, toss to evenly coat vegetables.

Pour vegetable mixture evenly over chicken.Bake at 350F for approximately 1 hour, or until internal temperature of chicken reads 165F (74C) on a meat thermometer and vegetables are tender.

Serve with crusty bread or over pasta, if desired.
