Cut: Bone-in chicken


2 lb (1000 g)  or 12 drumsticks

2 Tbsp (30 ml) oregano

1 tsp (5 ml) ground black pepper

1 tsp (5 ml) thyme

1 tsp (5 ml) garlic powder

1 tsp (5 ml) onion powder

½ tsp (2.5 ml) brown sugar

1/3 cup (80 ml) paprika

2 tsp (10 ml) salt

1 tsp (5 ml) cayenne

1 Tbsp (15 ml) butter, melted


Preheat oven to 375F.

Add dry Cajun spice ingredients to a small bowl and mix well.

Place drumsticks in a single layer in a pan.

Melt butter and brush evenly on drumsticks.

Season drumsticks generously with Cajun spice mixture by rolling drumsticks in spice blend to ensure all sides are evenly coated.

Transfer drumsticks to a baking pan.

Bake for 30 minutes, remove from oven turn and bake for an additional 15 minutes, or until internal temperature of thickest part of drumstick reads 165F (74C) on a meat thermometer.

Remove from oven and let rest for 5-10 minutes before serving.
