Ingredients

4-6 bone-in chicken breasts
3 Tbsp (45 ml) olive oil
1 ½ tsp (7.5 ml) smoked paprika
2 Tbsp (30 ml) fresh lemon juice
3 cloves garlic, minced
½ tsp (2.5 ml) salt
½ tsp (2.5 ml) black pepper
1 cup (250 ml) favourite prepared BBQ sauce, plus another ½ cup for brushing

Preparation

Remove skin from chicken breasts and place in a large bowl.

In medium sized bowl, combine the olive oil, smoked paprika, lemon juice, garlic, salt and pepper and the 1 cup of BBQ sauce. Pour over the chicken and cover bowl. Marinate for at least an hour, or up to 8 hours in the fridge.

Remove the chicken from the fridge 15 minutes before baking. Preheat oven to 375F. Lightly grease a baking dish just large enough to hold the chicken in one layer and the marinade.

Place chicken baking dish breast side down. Pour marinade over chicken. Bake, uncovered for 40 minutes, then turn the chicken breast side up and bake for another 15 minutes.

Brush top of chicken generously with remaining BBQ sauce and then return to the oven on broil for another 5-6 minutes or until the chicken has a slightly charred finish (watch carefully). Chicken is cooked when it reaches an internal temperature of 165 F (74 C). Remover chicken from oven, tent with foil and let rest for 10 minutes before serving.
