12 chicken drumsticks
1/2 cup (125 ml) flour
1 Tbsp (15 ml) chili powder
1 tsp (5 ml) EACH salt and pepper
2 eggs, beaten
2 1/2 cups (625 ml) crushed corn flake cereal


Variation: For a lower fat version, remove the chicken skin before coating the drumsticks in flour.

Preheat oven to 400F.

In a re-sealable plastic bag, mix together flour, chili powder, salt and pepper. Add the drumsticks, close the bag and shake it until the drumsticks are completely coated in the seasoned flour.

Dip each drumstick in beaten egg and roll it in the crushed corn flakes. Put drumsticks on a foil covered baking sheet and bake for 30-40 minutes or until a meat thermometer inserted into the largest drumstick read 165F (74C).
