The holiday season is in full swing and we’re getting ready by sending out our party invites, curating our food menus, preparing grocery lists and making a detailed schedule to fit in as many activities as possible. For most of us, December means weekend dinner plans, gift shopping, work holiday parties, baking for cookie exchanges, countless visits with all sides of the family… the list goes on.

When do you find time to get together with your friends? One of our favourite ways to entertain friends during the holidays is by hosting brunch! It’s easy to carve out a few hours midday to visit with friends and enjoy some food together. We fully embrace brunch as an opportunity to put our own creative spin on traditional breakfast favourites and incorporate our beloved protein of choice, chicken, into the menu.

Chicken and Vegetable Frittata

This colourful, flavourful dish features ground chicken, bell peppers and mushroom whisked in fluffy eggs and cream with a sprinkle of sharp cheddar and parmesan cheese. You can easily substitute in other vegetables we have on hand such as broccoli and spinach to put your own flair on this frittata.
