4 bone in, skin off chicken breasts
Saskatoon Pecan Sauce
1 tbsp minced onion
1 clove garlic, minced
1 tbsp butter
1 1/2 cups Saskatoon berries
1 tbsp maple syrup
1 tbsp chopped pecans
salt and pepper to taste
Preheat barbecue on medium heat.
Grill chicken breasts, bone side down, for about 14 minutes with the lid down. Turn chicken and continue grilling with the lid down until a meat thermometer inserted into the chicken reads 170F (77C) (about 10-14 minutes). Remove from grill, cover with foil and let stand for 10 minutes to let the juices settle.
Stir cook onion and garlic in butter for 2 minutes. Add remaining ingredients, bring to a boil, the reduce heat and simmer until sauce is slightly thickened. Spoon sauce over chicken breasts and serve immediately.
Tip: Use fresh blueberries, blackberries or cranberries is saskatoons are not available
