MOROCCAN SPICE MIX

Ingredients

1 tbsp cayenne powder
1 tbsp cracked fennel seeds
1 tbsp ground allspice
1 tbsp ground anise seed
1 tbsp ground black pepper
1 1/2 tsps ground cardamon
1 tbsp ground cinnamon
1 1/2 tsps ground cloves
2 tbsps ground coriander
3 tbsps ground cumin
1 tbsp ground ginger
1 1/2 tsps ground mace
1 tbsp ground nutmeg
1 tbsp ground star anise
1 tbsp sweet paprika (Hungarian)
1 tbsp turmeric

Preparation

Put all ingredients in a large jar with a lid. Close lid and shake jar until the spices are well mixed. Store in a cool dry place for up to 6 months. Use in Chicken Tagine, in meatballs or as a dry rub for chicken pieces or a whole bird.
