4 boneless skinless chicken breasts
2 cups fresh coarse breadcrumbs
1/2 cup finely grated Parmesan cheese
1/4 cup melted butter
1 tsp EACH dried thyme and oregano
1 tbsp lemon zest
freshly cracked black pepper to taste
Preheat oven to 400F.
Starting at the thickest side of the chicken breast, slice each piece in half and place the halves in a baking dish lined with parchment paper.
Combine the breadcrumbs, Parmesan, butter, thyme, oregano, lemon zest and pepper.
Top each piece of chicken with breadcrumb mixture.
Bake for 10-15 minutes, or until chicken is cooked through and the crumbs are golden.
Serve with a fresh tomato salad.
Tip: To make fresh breadcrumbs, remove the crusts from sliced white or multigrain bread. Cut the bread into very small cubes.
