4 chicken legs
1/3 cup soy sauce
2 tbsps lemon juice
1/4 cup liquid honey
2 tbsps hot water
1/2 tsp ground ginger
2-3 clove garlic, minced
Preheat oven to 400F (22C).
Put chicken legs, skin side up, on a foil covered baking sheet.
In a bowl, stir together sauce ingredients. Pour half of the sauce into another bowl and set aside to use as a dipping sauce.
Brush some of the remaining sauce onto each chicken leg.
Bake, brushing legs with sauce every 10 minutes, until a meat thermometer inserted a drumstick reads 170F (77C) (about 40 minutes). Let chicken stand at room temperature for 5 minutes before serving.
Warm the saved sauce in the microwave for 30-40 seconds on high. Serve the chicken with the dipping sauce, a salad, and rice or potatoes.
