1/3 cup (75 g) cream cheese, softened
2 Tbsp lime juice
3 green onions, finely sliced
1 jalapeno, seeded and finely chopped
2 cups, chopped cooked chicken (breast)
salt and fresh ground pepper
½ cup cilantro leaves
1 cup grated cheese (Monterey Jack, Cheddar or Tex Mex)
8 small corn or flour tortillas
In a medium bowl, combine cream cheese, lime juice, green onion and jalapeno.
Add chicken, salt and pepper and mix well.
Spread the chicken mixture over half the tortillas.
Top with cilantro and cheese and remaining tortillas.
Preheat stove top grill pan or BBQ to medium.
Grill quesadillas for 2 minutes each side or until heated through and crisp on the outside.
Serve with Salsa Verde or Pico de Gallo (fresh tomato onion, jalapeno salsa)
Note: this recipes is easily doubled to make 4 servings.
