6 chicken legs
6 tsp + 3 Tbsp mango chutney
3 Tbsp butter
3 tsp minced fresh cilantro
Preheat oven to 400F.
Loosen skin on each chicken leg, leaving skin attached at the edges. Spread 1 tsp chutney under the skin of each chicken leg and smooth skin over top. Season with salt and pepper.
Bake until a meat thermometer reads 170F (about 40 – 45 minutes).
Remove from oven and let stand for 10 minutes.
Heat butter and 3 Tbsp chutney until the butter is melted. Add cilantro and stir well. Drizzle over cooked chicken. Serve immediately.
